This position is located at NCBC Gulfport and is responsible for the administration, operation, and maintenance to provide social and recreational facilities, essential and nonessential meals, refreshments, and Category C movie program operations. The purpose of this position is to provide direct supervision of the Food and Beverage program and oversight of the Movie Program.
The incumbent is responsible for the direct support of the following location: Reel Roast and Seabee Cinema.

MAJOR DUTIES AND RESPONSIBLITIES: Plans, directs and supervises the activities of the entire Food and Beverage and cinema operation. Duties encompass the hiring, training and motivation of employees for quality Food and Beverage and cinema service to the guests. Interface with the Operations Manager in the planning of programs, menus, movies, and internal controls necessary for a viable and successful operation.
Responsible on a day-to-day basis for Food and Beverage/movie controls and managing operational costs. Incumbent is responsible for the proper relation of cost of goods to labor, food waste and spoilage. Develop and maintain stock control cards, par stock levels and daily inventories. Prepare marketing lists, determine food and beverage requirements and related supplies.
Develop and maintain standardized recipes on batch and item cost control cards with recommended selling prices. Inspects deliveries for quality and quantity. Accountability of food and beverage equipment and supplies. Maintenance of sanitation and health inspection standards. Keeps abreast of the technical advances in food and beverage equipment and preparation procedures for same. Plans, reviews, approves and prices menus.
Daily, plans for the utilization of food surplus or leftovers. On a continuing basis, checks methods of preparation, size of portions and appearance. Conducts food and beverage inventories as required. Operates the CAT C movie program utilizing Digital Cinema Package (DCP) projection equipment and associated sound reproducing equipment. Ensures effective movie scheduling, marketing, operation and customer service.
Monitors performance of feature films in commercial releases and ensures timely delivery and return of movies. Carries out necessary liaison with other staff officials that support the Movie Program activities, marketing products, and events. Reports the attendance finalization for each showing for the Movie Program. Works with Navy Entertainment on Advance Showings and develops marketing strategies to maximize attendance.
Responsible for the training and direct supervision of subordinates and weekly scheduling and assignment of their duties. Evaluates performance and initiates required personnel actions. Annually develops an income, expense and capital expenditure budget for the food and beverage and movie operations.
